C’est un apéritif à base de vin blanc dans lequel on a fait macérer diverses plantes aromatiques, amères et toniques. Les marques de Vermouth proviennent surtout de la France et de l’Italie.
Les types principaux sont les vermouths blancs (dry) français, et rouges (rosso) italiens. Il est utilisé dans les cocktails classiques comme le Martini et le Manhattan.
AROMATES
Les aromates est l’atout principal du vermouth pour lui donner son bouquet et son arôme caractéristiques. La recette des préparations est gardée secrète pour chaque marque.
Les principes aromatiques sont extraits par infusion OU macération dans un mélange d’alcool pur et d’eau. Un extrait aromatique est alors obtenu afin de le laisser vieillir quelques mois avant de l’utiliser pour la préparation du vermouth. Cet extrait peut contenir les essences d’une quarantaine de plantes.
Il existe plusieurs types de vermouth :
– Le vermouth dry (becco) possède une teneur en sucre qui ne dépasse pas 40 g par litre (18°). Les seccos italiens sont en général très clairs tandis que les vermouths secs français sont d’une couleur jaune plus prononcée.
– Le vermouth blanc moelleux (bianco) se diffrencie du premier par une teneur en sucre de 100 à 150 g par litre (18° environ). La couleur de ce vermouth est d’un beau jaune doré et son arôme plus délicat.
– Le vermouth rouge (rosso) a quand à lui une teneur en sucre de 150 g par litre comme le vermouth blanc (18°). Il affiche une belle couleur Brun ambré, dû principalement à une adjonction de caramel. Son arôme est plus affirmé.
Le vermouth de Turin (entre 15,5° et 16°) a un arôme prononcé de vanille, de quinquina ou de plantes amères.
